We live in a microbial culture of sorts, wherein between 70–90% of the cells in the human body are bacterial and fungal, while less than a third are human. 30% of the world’s population eats using their hands, enabling the microbiome contained in one’s hands to get 'recycled’ back into our own bodies and our gut system. Fermentation is the transformative power of microorganisms to pre-digest food for us, making nutrients more bioavailable. 

Therefore, the practice of preparing and consuming food with our hands completes the cycle of being one with our multispecies world. Who we are (ingredients), what medium we live in (society), and external influences are crucial to determining how we develop and nurture ourselves and the community.
