Step into a journey where time, taste, and tradition converge. This workshop with Akshay Quenim uncovers the story of the Mandovi Hotel (est. 1952) and its iconic restaurant Rio Rico—a landmark moment in Goan hospitality where Portuguese finesse met Goan soul.

Discover how colonial influence and local intuition intertwine in the kitchen: European techniques reimagined with local spices, fresh coastal produce elevated with classic sauces, comfort dishes enriched by bold global flair. The result was a new flavour language—neither purely Goan nor Portuguese, but something uniquely and deliciously in-between.

As we revisit these stories, we explore how this fusion of cultures shaped not only menus, but memories. And how that legacy is being reborn today through Sabores at Clube de Palma in Bambolim—where the spirit of Rio Rico finds new life for a modern palate.
